Buy salep at home as prepared powder from a known spice importer, never as raw wild orchid tubers sold under that name. This spice is the dried, ground tuber of certain terrestrial orchids.
It is valued for the thick starch it releases in hot liquid. That one choice, powder over raw tubers, keeps you out of a trade that is emptying wild orchid populations. Turkey, Greece, and Iran feel that pressure most.
What Is Salep?
Salep comes from the dried, ground tubers of terrestrial orchids in the genera Orchis, Anacamptis, Ophrys, and Dactylorhiza. Harvesters dig up the paired underground tubers, boil them briefly, then dry and grind them into a fine powder. A CITES trade review documented 109 orchid species used to make this spice.
That is out of 374 orchid species eaten in any form worldwide. That count alone shows how widespread the practice is across the orchid family. The powder is prized for glucomannan, a starch that thickens hot liquid into a smooth, slightly stretchy texture.
That texture is the whole reason orchid tubers show up in a winter drink. It also explains one particular style of ice cream. Ophrys, Dactylorhiza, and Orchis are the genera most often named in trade surveys.
A single plant usually contributes just one or two harvestable tubers. Each tuber weighs under a gram once it is trimmed and dried.
The Drink and Dondurma Ice Cream
Orchid tuber powder mixed with hot milk, sugar, and cinnamon makes a thick, warming drink. It is served across Turkey and neighboring countries. Vendors often dust the top with extra cinnamon before serving.
The same starch gives Turkish dondurma ice cream its signature stretch and chew. A single busy cafe in Ankara can use 75 to 100 kg of the powder a year. That covers drinks and desserts combined.
Commercial dondurma production consumes far more than any single cafe needs. Confectioners are estimated to need 40 to 50 million orchid tubers a year. That figure covers Turkish ice cream demand alone.
That scale is a major reason wild populations cannot keep up with demand. Maras style ice cream alone is estimated to use around 2,000 kg of the dried powder yearly. No other common food ingredient depends this heavily on wild dug orchid tubers.
A Short History
This spice has a documented history reaching back through the Ottoman Empire. It was sold as a street drink in Istanbul long before it reached Europe. The trade reached Europe by the 1600s.
Londoners drank a version called saloop from street stalls. It disappeared once coffee took over that role. Ottoman era trade records describe it as valuable but labor intensive to produce.
The Conservation Crisis
Making one kilogram of the dried spice typically takes 1,000 to 4,000 tubers. Each one weighs so little on its own that huge numbers are needed. That ratio is the core of the problem.
A single cup of the drink can use as many as 13 orchid tubers by itself. Turkey’s wild harvest is estimated at 30 to 120 million tubers a year. Iran’s harvest runs roughly 5.5 to 6.1 million tubers annually.
Most orchids sold for this trade are still dug from wild populations, not farmed. Many of the species involved overlap with the ones profiled on our rarest orchids in the world page. Turkey now restricts export of raw wild tubers.
Many source species also fall under CITES protection. Researchers who tracked online listings for this ingredient found that roughly half lacked any species identification at all. Habitat loss and drought add further pressure on the same wild orchid populations that supply the trade.
None of this makes an occasional cup of the drink dangerous to enjoy. It does mean the raw material behind it is under real, documented pressure. Choosing prepared powder from a traceable seller is the one lever an individual buyer actually controls.
Why You Cannot Grow This Crop Yourself
Salep orchids will not scale up like a garden vegetable. Their seeds carry almost no stored food. They need a compatible fungus just to germinate at all.
A recent study on two related terrestrial orchids tested that dependence directly. Germination rates reached up to 91% when paired with the right fungal partner. Without that fungus, one of the two study species barely germinated.
The compatible fungus forms coils called pelotons inside the seedling’s cells. Those coils pass along nutrients the tiny seed cannot supply on its own. That relationship cannot be replaced with fertilizer or a growing medium.
Wild terrestrial orchids also resist being dug up and moved, for the same reason. Purple fringed orchids studied in New Jersey have failed to survive transplanting out of native soil.

Farming this crop commercially would mean solving fungal partnerships at a scale no grower has managed. That is why almost every kilogram in trade still comes from the wild, not a nursery bed.
Substitutes and Imitation Powder
Most instant mixes sold outside Turkey and Greece contain little or no real orchid tuber. Manufacturers commonly substitute cornstarch, guar gum, or xanthan gum for the same thickening job. These blends taste similar in a hot drink but carry no conservation risk.
Reading the ingredient list is the most reliable way to tell the two apart. If orchid or tuber does not appear near the top, the product is almost certainly a flavored starch blend. It is not the genuine spice made from orchids.

Buying Orchid Tubers Legally
Searches for orchid bulbs or tubers usually mean one of two very different things. Garden centers sell hardy terrestrial orchids such as Bletilla and Pleione as nursery propagated tubers. These have nothing to do with the wild harvested species used for salep.
Real tubers of this kind are largely illegal to export from Turkey. Many face growing restrictions elsewhere too. A product labeled pure salep and shipped internationally should raise questions about its origin.
Buying prepared powder from an established spice importer is safer than buying raw tubers of unknown origin.
